Method
- Add the oats, peanut butter, honey or maple syrup, mini chocolate chips, flaxseed or chia seeds if using, vanilla extract, and salt to a mixing bowl.
- Stir until the mixture is thick and well combined.
- Chill the mixture for 10 to 15 minutes if it feels too soft to roll.
- Scoop and roll the mixture into small balls.
- Place the energy balls on a plate or baking sheet.
- Chill for about 20 minutes, or until firm.
- Store in an airtight container in the refrigerator.
Notes
If the mixture feels too dry, add a little more peanut butter or honey. If it feels too sticky, chill it before rolling. Store the energy balls in the refrigerator for up to 1 week or freeze for up to 2 months.
