- Add the Greek yogurt, mayonnaise if using, lemon juice, Dijon mustard, salt, and black pepper to a mixing bowl.
- Stir until smooth.
- Add the cooked chicken, celery, onion, and fresh herbs.
- Stir until the chicken is evenly coated in the dressing.
- Taste and adjust with more lemon juice, salt, or black pepper if needed.
- Fold in grapes, apples, nuts, or dried cranberries if using.
- Chill for 15 to 20 minutes if time allows.
- Serve on toast, in a sandwich, in a wrap, over greens, or with crackers.
Notes
Use plain Greek yogurt, not sweetened yogurt. Rotisserie chicken works well for a quick version. Stir before serving if any liquid separates after chilling. For best texture, add crunchy extras like nuts or cucumber right before serving.
