Greek Yogurt Chicken Salad

Ingredients
  

  • 3 cups cooked chicken shredded or chopped
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise optional
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup celery finely chopped
  • 2 tablespoons red onion or green onion finely chopped
  • 2 tablespoons fresh dill parsley, or chives, chopped
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper
  • Grapes apples, walnuts, almonds, or dried cranberries, optional

Equipment

  • 1 mixing bowl
  • 1 spoon
  • 1 knife
  • 1 cutting board

Method
 

  1. Add the Greek yogurt, mayonnaise if using, lemon juice, Dijon mustard, salt, and black pepper to a mixing bowl.
  2. Stir until smooth.
  3. Add the cooked chicken, celery, onion, and fresh herbs.
  4. Stir until the chicken is evenly coated in the dressing.
  5. Taste and adjust with more lemon juice, salt, or black pepper if needed.
  6. Fold in grapes, apples, nuts, or dried cranberries if using.
  7. Chill for 15 to 20 minutes if time allows.
  8. Serve on toast, in a sandwich, in a wrap, over greens, or with crackers.

Notes

Use plain Greek yogurt, not sweetened yogurt. Rotisserie chicken works well for a quick version. Stir before serving if any liquid separates after chilling. For best texture, add crunchy extras like nuts or cucumber right before serving.
