- Crack the eggs into a mixing bowl.
- Add milk or cream if using, then whisk until smooth and evenly yellow.
- Heat a nonstick skillet over low to medium-low heat.
- Add the butter and let it melt gently.
- Pour the eggs into the skillet and let them sit for a few seconds.
- Use a spatula to slowly push the eggs from the edges toward the center.
- Cook gently until the eggs are mostly set but still soft.
- Remove the pan from the heat.
- Stir in the fresh herbs.
- Season with salt and black pepper to taste.
- Serve right away with toast, avocado, potatoes, or fruit.
Notes
Cook the eggs over low heat for the softest texture. Remove them from the pan while they still look slightly soft because they will continue to cook from residual heat. Add fresh herbs near the end so they stay bright and flavorful.
