Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract optional
  • Butter or oil for cooking as needed
  • Maple syrup optional for serving
  • Fresh berries optional for serving

Method
 

  1. Whisk the flour, baking powder, sugar, and salt together in a mixing bowl.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla extract if using.
  3. Pour the wet ingredients into the dry ingredients.
  4. Stir gently until just combined. A few small lumps are fine.
  5. Let the batter rest for about 5 minutes.
  6. Heat a lightly greased nonstick skillet or griddle over medium heat.
  7. Scoop the batter onto the skillet.
  8. Cook until bubbles appear on the surface and the edges look set.
  9. Flip and cook the second side until golden.
  10. Serve warm with maple syrup, butter, berries, or your favorite toppings.

Notes

Do not overmix the batter. A few small lumps help keep the pancakes tender. If the batter feels too thick, add a small splash of milk. Keep cooked pancakes warm in a low oven while finishing the batch.
