- Whisk the flour, baking powder, sugar, and salt together in a mixing bowl.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients.
- Stir gently until just combined. A few small lumps are fine.
- Let the batter rest for about 5 minutes.
- Heat a lightly greased nonstick skillet or griddle over medium heat.
- Scoop the batter onto the skillet.
- Cook until bubbles appear on the surface and the edges look set.
- Flip and cook the second side until golden.
- Serve warm with maple syrup, butter, berries, or your favorite toppings.
Notes
Do not overmix the batter. A few small lumps help keep the pancakes tender. If the batter feels too thick, add a small splash of milk. Keep cooked pancakes warm in a low oven while finishing the batch.
