Method
- Line an 8-inch square pan with parchment paper.
- In a mixing bowl, stir together the melted butter, peanut butter, graham cracker crumbs, powdered sugar, vanilla extract if using, and salt.
- Mix until the peanut butter layer is thick and well combined.
- Press the mixture firmly into the prepared pan in an even layer.
- Add the chocolate chips and 2 tablespoons peanut butter to a microwave-safe bowl.
- Microwave in short intervals, stirring between each, until smooth and melted.
- Spread the melted chocolate mixture evenly over the peanut butter layer.
- Refrigerate for at least 2 hours, or until firm.
- Lift the bars out of the pan using the parchment paper.
- Slice into squares.
- Serve chilled.
Notes
Use shelf-stable creamy peanut butter for the most reliable texture. Chill the bars fully before slicing. If the chocolate layer is too firm, let the bars sit at room temperature for a few minutes before cutting.
