- Line an 8-inch square pan with parchment paper.
- Add the peanut butter and honey or maple syrup to a small saucepan or microwave-safe bowl.
- Warm gently until smooth and easy to stir.
- Stir in the vanilla extract and salt.
- Add the rolled oats to a mixing bowl.
- Pour the warm peanut butter mixture over the oats and stir until evenly coated.
- Fold in the mini chocolate chips, dried fruit, nuts, or seeds.
- Press the mixture firmly into the prepared pan.
- Chill for at least 1 hour, or until firm.
- Lift the mixture out of the pan using the parchment paper.
- Slice into bars.
- Store in an airtight container in the refrigerator.
Notes
Press the mixture firmly into the pan so the bars hold together. If the mixture feels too dry, add a little more peanut butter or honey. If it feels too sticky, add a few more oats. Keep the bars chilled for the best texture.
