Ingredients
  

  • 1 slice sturdy bread
  • 1/2 ripe avocado
  • 1 large egg
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 1 teaspoon butter or oil
  • Optional toppings: red pepper flakes, hot sauce, herbs, or everything bagel seasoning

Method
 

  1. Toast the bread until golden and crisp.
  2. Mash the avocado with lemon juice, salt, and black pepper.
  3. Heat butter or oil in a small pan over medium heat.
  4. Fry the egg until the whites are set and the yolk is cooked to your liking.
  5. Spread avocado over the toast.
  6. Top with the fried egg and any optional toppings.
  7. Serve immediately.

Notes

Use ripe avocado for the best texture. If the avocado is firm, the toast will not be as creamy. For extra flavor, add red pepper flakes, hot sauce, or everything bagel seasoning.
