Ingredients
  

  • 1 ripe banana
  • 2 large eggs
  • 1/2 cup oats
  • 1/4 teaspoon cinnamon optional
  • 1/4 teaspoon vanilla extract optional
  • Butter or oil for cooking

  • 1 fork
  • 1 nonstick skillet
  • 1 spatula

Method
 

  1. Mash the banana in a mixing bowl until mostly smooth.
  2. Add the eggs and oats, then stir until combined.
  3. Let the batter sit for 5 minutes if possible so the oats can soften.
  4. Heat a lightly greased nonstick skillet over medium-low heat.
  5. Spoon small pancakes into the skillet.
  6. Cook until the edges look set and the bottoms are golden.
  7. Flip gently and cook the second side until golden.
  8. Serve warm with your favorite toppings.

Notes

Keep the pancakes small so they are easier to flip. If the batter feels too loose, add another spoonful of oats and let it sit for a few minutes. Use ripe bananas for the best natural sweetness.
