- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- Whisk the flour, baking soda, cinnamon, and salt together in a mixing bowl.
- In a separate bowl, beat the softened butter, brown sugar, and granulated sugar until creamy.
- Add the egg and vanilla extract, then mix until smooth.
- Add the dry ingredients and stir just until combined.
- Fold in the oats and any optional raisins, chocolate chips, or chopped nuts.
- Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 9 to 11 minutes, or until the edges are lightly golden and the centers still look soft.
- Let the cookies cool on the baking sheet for 5 minutes.
- Transfer to a wire rack to cool completely.
Notes
Use old-fashioned oats for the best chewy texture. Do not overbake the cookies; the centers should still look slightly soft when they come out of the oven. For thicker cookies, chill the dough for 20 to 30 minutes before baking.
