Ingredients
  

  • 2 cups rolled oats
  • 1 1/2 cups milk
  • 1 large egg
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 apples diced
  • 1/4 cup chopped walnuts or pecans optional
  • 1/4 cup raisins or dried cranberries optional
  • Butter or oil for greasing the baking dish

Method
 

  1. Preheat the oven to 350°F.
  2. Lightly grease a baking dish with butter or oil.
  3. In a mixing bowl, stir together the rolled oats, cinnamon, baking powder, and salt.
  4. In another bowl, whisk together the milk, egg, maple syrup or honey, and vanilla extract.
  5. Pour the wet ingredients into the oat mixture and stir until combined.
  6. Fold in the diced apples, nuts, or dried fruit if using.
  7. Pour the mixture into the prepared baking dish and spread it evenly.
  8. Bake for 30 to 35 minutes, or until the oatmeal is set and lightly golden on top.
  9. Let it cool for 5 to 10 minutes before slicing.
  10. Serve warm with yogurt, milk, peanut butter, extra apple slices, or maple syrup if desired.

Notes

Use rolled oats for the best texture. Dice the apples small so they soften while baking. Let the baked oatmeal rest for a few minutes before slicing so it holds together better. Add a splash of milk when reheating if you like a softer texture.
