- Cook the pasta in salted water until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta.
- Pat the shrimp dry and season with salt and black pepper.
- Melt the butter in a large skillet over medium heat.
- Add the garlic and cook for about 30 seconds, just until fragrant.
- Add the shrimp and cook for 1 to 2 minutes per side, until pink and opaque.
- Add the cooked pasta, parmesan, lemon juice, and a splash of reserved pasta water.
- Toss until the pasta is glossy and lightly coated.
- Add more pasta water if needed to loosen the sauce.
- Finish with parsley, red pepper flakes, and extra parmesan if desired.
- Serve warm.
Notes
Shrimp cooks very quickly, so avoid overcooking it. Save pasta water before draining because it helps the butter and parmesan turn into a light, glossy sauce. Reheat leftovers gently with a splash of water, milk, or broth.
