- Cook the pasta in salted water until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta.
- Melt the butter in a skillet over medium-low heat.
- Add the garlic and cook for 30 seconds to 1 minute, just until fragrant.
- Add the cooked pasta, parmesan, black pepper, and a splash of reserved pasta water.
- Toss until the pasta is glossy and lightly coated.
- Add more pasta water if needed to loosen the sauce.
- Taste and adjust with salt, pepper, parsley, red pepper flakes, or lemon juice if desired.
- Serve warm.
Notes
Save some pasta water before draining. It helps the butter and parmesan turn into a light, glossy sauce. Serve right away for the best texture. Add chicken, shrimp, peas, or spinach to make it more filling.
